Cacao Energy Balls

It was a typical Sunday afternoon when I was doing my food preparation for the week and all of the sudden, BAM!!! These cacao energy balls came flying towards me…ok, so it didn’t happen exactly like that but kinda! Perhaps you don’t cook like I do and that’s ok but one thing I do, that I encourage others to try is to get creative, try a little bit of this and a lil bit of that. Sometimes, you will surprise yourself! It doesn’t always come out amazing but sometimes…it does!! I like to think about this concept and apply it to life. I am currently in the process of uprooting my life here in San Diego and relocated it to Salt Lake City. It’s a big change for me, and I have fear around what I am going to do there. But I know one thing is for sure, stay open stay creative, try a little bit of this and a little bit of that, if it turns out to be not so great, it’s ok!!

I like to think about this concept and apply it to life. I am currently in the process of uprooting my life here in San Diego and relocated it to Salt Lake City. It’s a big change for me, and I have fear around what I am going to do there in different areas of my life (like for work, building a new community, or when it gets cold outside!!) but one thing is for sure as long as I stay open, creative, try a little bit of this and a little bit of that, everything will turn out ok and if it’s not, try another recipe or a different path!!

Ok, now back to balls. Here is what I did (yes, I am guesstimating), combine all of the following ingredients in a food processor, blend until it’s in a sticky, delicious ball of a mess.

1 cup dates

3/4 cup walnuts

1/4 cup flax seeds

1/4 cup coconut flakes

1/4 cup cacao powder

2 tbs maca powder

2 tbs of maple syrup

Yeah, that’s it! Once it is blended, sprinkle shredded coconut on a plate and roll a small junk into a ball and into the coconut). You can make these different sizes and even add other ingredients like chia/ sesame/ sunflower seeds or other types of nuts that you may have lying around.

Again, I deeply encourage playing around with measurements and different ingredients to what you already have in the kitchen. Give it a shot! Keep balls in a container and eat for snacks or pre-workout. These balls are naturally sweet and will give you a burst of energy when you need it. They are delicious so please enjoy your cacao energy balls and do your best not to eat all of them at once! Ha! It’s a little hard because they are that good but I believe in ya!
