Meatless “Meatballers”

I love this recipe and playing with it by adding a little more of this or that, like nutritional yeast, cilantro, black beans and much more. It’s a great food to have frozen (the dough) so when I am in a pinch I can prep it for dinner…or prepping a bunch of these balls and throwing them on my salads or in a yummy pasta sauce. They are quite versatile!

 

Meatless “Meatballers

– 1⁄2 cup lentils

– 1-1⁄4 cup veggie broth or water

– 1⁄4 cup chopped scallions

– 1⁄2 tsp minced garlic

– 1⁄2 cup shredded carrots

– 1⁄2 cup soaked and drained walnuts

– 1⁄4 cup almond meal

– 2 tbsp ground flax seeds

– 2 tbsp nutritional yeast

– 1⁄2 tsp cumin

– 1⁄2 tsp pink salt

– 1⁄4 tsp black pepper

– 1⁄2 tsp coconut oil

In a medium pot, heat veggie broth until boiling and add lentils. Then reduce heat and

cover for 10-15 minutes until cooked all the way through. Add a little more liquid if they

aren’t cooked. Once they are, drain any excess off. In a skillet, heat coconut oil (or veggie

broth) and add scallions until translucent, add carrots and garlic for another few minutes.

Then take all ingredients (including lentils, onions, nuts, herbs) and gradually pour into food

processor. Pulse a few times (no need to leave on, a few pulses will do the trick). Mix and

mush the ingredients by hand with a wooden spoon. Take mixture and roll into balls the size

of a golf ball. Place balls on a baking tray with parchment paper, lightly brush with olive

oil if desired. Bake in oven on 350 for 25-30 minutes. Enjoy in a salad, with hummus or with

other homemade sauce!
